Day 8: Chocolate Covered Cherries
Chocolate Covered Cherries
2 1/2 cups powdered sugar
1/4 cup butter, softened
1 tablespoon milk
1/2 tsp almond extract
2 - 8 ounce jars maraschino cherries with stems, well drained
Chocolate bark or 2 cups semi sweet chocolate chips and 2 tablespoons shortening
Combine sugar, butter, milk and extract; mix well. Knead into large ball. Flatten small amount into circle and wrap around cherries. Place with steam up on wax paper lined baking sheet. Cover loosely and refrigerate overnight. Melt chocolate bark or chocolate chips with shortening. Holding onto the steam, dip cherries into chocolate; set on wax paper to harden. Store in a covered container. Refrigerate 1-2 weeks before serving. The longer the cherries sit the juicer the center will be.
